Hi Rob, 

Try 

 set_palette( 2 ) ; 

before plotting, see if that helps.

You might also need to adjust the min,max.
  plot_image( image, 1, x, y, low, high );

or
  plot_image( log(image+1), 1, x, y, low, high );


I usually also invert the display (before opening the device):

  putenv("PGPLOT_BACKGROUND=white");
  putenv("PGPLOT_FOREGROUND=black");

so pgplot draws black lines on white background.
